What is “Hanging Weight” (HW)?
Refers to the weight of the pig carcass after removing the head, hide, and entrails but before processing into individual cuts. It’s important to note that hanging weight is not the same as the final packaged meat weight. After trimming and processing, you can expect to receive approximately 65-70% of the hanging weight in packaged pork.
When do I pick up my Pork?
After receiving your down payment, we will provide you with an estimated date for pick-up. Pork orders are processed throughout the year, ensuring you receive your order as soon as it’s ready.
How much freezer space will my pork take?
A half-pork share requires approximately 3-4 cubic feet of freezer space, about the size of a small chest freezer. A whole pork share will need around 6-7 cubic feet of space, making it ideal for those with larger freezers
What Do I Get?
Below is based on an average half-side of pork with a live weight between 250 -270 pounds. Unfortunately, at this time we do not offer any smoking.
Chops and Steaks
- 30-40 pork chops (¾” thick, packaged in pairs)
- 6 pork steaks
Roasts and Ribs
- 4-6 shoulder roasts (3-4 lbs. each)
- 2-4 loin roasts (3 lbs. each)
- 2 racks of spareribs
Ham and Bacon
- 2 hams (can be left whole or sliced)
- 10-15 lbs. of bacon
Ground, Sausage & Other Cuts
- 30-40 lbs. of ground pork or sausage (in 1-lb. packages)
- 4-6 packages of pork hocks (great for soups or stews)
- 1-2 packages of lard (upon request)
